18 - The Power of Intention

Free for all Friday finds us with the first one on one discussion with you, me (Kari) and the mic. I talk about the power of intention and what it means.  One of my intentions with talking about intention is to share with you why I am podcasting and I how I would love to learn more about you. Beets are great because they have a nitrate count. This is good for us because nitric oxide helps us runners run longer and with out feeling tired.  Nitric Oxide is best if consumed frequently.  Other sources are nitric oxide are dark green leafy vegetables, spirulina algae and cherries.

Serena likes to have beets cooked in a 400/425 oven with oil which makes them soft - she likes to let the beets cool a  bit an then finely cut beets and add feta cheese to make a tasty salad.

Kari likes to take beets, throw them in tinfoil, (not washed) and put on the grill for an hour

Once the beets are cooled, take out some gloves and simply push the thick skin off of the beets.

Chop the beets up finely, add goat cheese to a spring vegetable mix and toss with a home made vinaigrette (olive oil, dijon mustard, vinegar and olive juice)

Serena suggests taking leaves from beets and taking them off and putting them together with the spring mix to bulk up the salad. Yum!

Beets and oranges go together a lot because of the salty sweet combination going on.
