33: Dominick Martino

Dominick Martino loves 5Ks and getting outside. We hear why running was challenging for him as a kid and how Dominick was able to take his bad memories of running (hand me some Kleenex please!) and actually start to like to run as an adult. During our chat, Dominick talks about his journey of becoming a yoga practitioner and then a yoga teacher.  We’re left with a powerful message when Dominick shares with us what he thinks about defining ourselves as runners.

I talked with Serena Marie, RD about red bell peppers. Red bell peppers are great because they have twice the vitamin C of an orange, with a lot less sugar and carbs.  They also have lutein and zeaxanthin (carotenoids), which are likely to be protective to eye health and to prevent macular degeneration.  Serena likes to use peppers as a vehicle to stuff things into, such as chickpeas, sausage, and spices, or with eggs.

I like to roast peppers on the grill and mix them with a dressing of olive oil, red pepper flakes, olive oil juice, salt and pepper over a mixed green salad. With leftover peppers, I like to toss them in omelets and make them a key ingredient in a fajita salad.
